Throwing them at your rivals faces.
But if at any point in the future you could identify a skull as having belonged to a particular character or NPC then you could do more stuff with them, like killing people and then sending their head to their families. Or stash up on camp shamans' heads so the folks at the Hanged Misfit know you're my pal.

Trawling. Scouts and explorers alone can find extra stuff in the water. I think trawling is appropriate because the classes feel like being in a pool of sadness.   |

Surely the purpose of taking a skull, any skull, is the sheer pleasure of parading it.
"Quickly dodge my poison darts, Zakano? Guess who is holding your skull now eh?"
Animal hides and tusks are a different thing entirely, as any good trapper knows: they have inherent value.

What others said - decoration and status symbols. And trading.
Perhaps Shamans could gain a slight improvement to their spirit skills with the skull of santa or one of the big ones. That's as much practical value as I'd like to see.
