Increase yeastweed yields in swamps/grasslands. Why? To make producing wine a viable means of profit, rather than just a novelty for bars.
I don't think this would be tough to do, and it would be very useful for people like me.

Valuable how? As an item, it's produced almost exclusively for bars and raiders. Selling it at the trading hut is NOT worth the effort in the slightest. Factor in that bars have almost always hired their own personal wine-makers, it makes producing wine on a 'commercial' scale almost worthless. So, for the process of gathering the fruit, juicing, finding the yeastweed, and brewing? On a cost to effort basis, it's not worth it. In fact, places like the Hanged Misfit are severely ripping themselves off in terms of wine production. 5 GC for a bottle of wine is basically giving it away at the rate of making gold compared to the process of making the stuff. Also factor in that some settlements aren't close to a swamp or grassland, and making wine is made that much more difficult.
I would also be in favor of distilleries at settlements that produce more wine in exchange for nominate quantities of yeastweed.

i like that they are rare, but i also think one should be able to find them in clusters like boxes of bullets. that way when you do find some, you get a chance of collecting a few at a time.

Scarcity = Value
Hence why gold was is valuable, even before we'd worked out a use for it. People will pay for it. The Misfit is a bad example because they have a source right next to them, but that's unique to them.

I am lucky yeastweed is so close. I have a couple of players that is kind enough to give me 30-40 yeastweed at a time. I did buy a batch of wine from a player the other day because I love the character he was playing but most times I make it myself. There has been many times a round of wine has been bought so I do just fine on the wine sales. I also sell enough poison wine to be worth it. I have sold poison juice but most times I hand them empty bottles and show them where the poison bushes are.
But yeah, getting yeastweed in other swamps is a bit harder. I am glad there are not as many alligators as there are in Tarak/Claw swamp but to make things a little harder, Derby's swamp could use a few more.

Alright, well, to reflect the 'rarity' of wine, how about an increase in trading post sell/buy rates? Getting people to buy stocks of wine is harder than it sounds, and I would like to do more than FAK farming (which has been proven to earn more gold than the wine trade).

When I first started, I sold faks and pumpkins to make money to get started in the bar business. You can make more money selling herbs, pumpkins and faks then trying to sell booze so you have to like what you're doing to even try running a bar. I think I have given away more wine then I have ever sold but I like growing the bushes and brewing it. It's too bad you really can't drink more then 8-10 bottles of wine at a time before your character gets so drunk they stagger around and can't talk straight.
You could promote drunkin' fist fights and then sell the wine to them in boxes of 10 which might work. I did help a friend with 50 bottles of wine once so she could see how much xp she could get in one day. After drinking a mix of 50 poison wine and tasty wine you would think she would be totally drunk. It turned out after drinking them all she ended up drinking herself sober which is an odd concept in the game.
