Each value is still accurate (as far as I'm aware) - every object has a value which isn't on any particular scale, but 1 GC = 100. This value is used by the traders as a base for converting quantities of (for example) machetes into poison darts. There are some other maths involved so it's not a straight conversion, and that's where things like haggling etc are involved. I don't think you'd need to work out new values as it still gives a reasonable idea of relative costs.
So how can we work out new values? Say the wines for example, we need to fill out those prices, how can we do this.

What's the point of having those values listed? It's not that anybody can consult them before doing trades. You get gold coins, not dollars, and the amount usually depends on the trader's mood, haggling skill, availability of the good, etc. Even your language skills can have an effect. I would get rid of those estimations as they just confuse new players. If somebody has enough patience, there could be gold coin intervals instead but that's a lot of work to research that. I made a page about brewing that can be found on my user page. I tried to include as many links to other pages as possible. I'd like to get some feedback before moving it to the actual wiki. Besides, I don't know how to make all the words brewing link to this page. Some of them lead to the skill pages, some to articles about classes. I would also appreciate if someone could show me how to apply colours to left and right sides of the table. I want the regular drinks to have one background and brewed drinks another. There are examples of how to change the background of certain cells or apply it to the whole row but I don't know of an elegant solution that could be apply colours vertically, to the columns. The table could be prettier overall as well.

I'll look at your page, but I don't know of an easy way to add colors to charts and tables. Maybe Johan or Etherdrifter know.

I was looking at the code of the Shartak Items page and some Wiki help pages. Adding colours to the rows seems to be easy and I have been able to do that. The whole syntax seems to be oriented to rows, not columns. I might be wrong about this but I couldn't find an example of colouring the latter.

So what does everyone think are the most important pages to update/change? I don't have a huge amount of the time at the moment so I want to make sure any time I spend putting in to this is well placed.

Honestly Tom, work on whatever page you think needs working on. Doing this isn't fun if you aren't working on something you would like to work on.
Ahanom, your page looks good to me.

I, for one, often used as a newbie, and still do use the values listed for planning good trades. Please don't remove good information! I would consider that wiki vandalism.

indeed, even if it's not particularly accurate, a rough reference for the relative values of various items is helpful.
i wonder if someone could create a greasemonkey script that keeps track of trader interactions and averages out the values of everything automatically.

Moved the Brewing article from my talk page to its place on Wiki. Also, added additional links to Neil's class and skill descriptions. Didn't touch any of those links that were already in place.

I am planning on completely re-organising the items page. Unless there is some very important reason not to, I think we should have a page for each item. So at some point it would be very useful if someone more knowledgeable than me could create a new category for items. And tell me how to include a page in that category, perhaps even how to sub-divide it. So we can get a page similar to this for items- http://wiki.shartak.com/index.php/Category:Clans

As for creating a category for items, merely add this code to the bottom of the page [[category:Items]]. I'll go create that category page now.

Any idea how to do sub-categories? For example, Melee Weapons.

No idea, it looks to be a navigation bar type of thing. Johan would know how to do this. I think we should go ahead and make the pages, and Johan can help us with the subcategories.
